Sugar Cookies
Ready, set, rose.

I count down until the Bachelor premieres. By month, by week, by day, by hour… it’s pretty pathetic. No shame. I had to celebrate the start of the season with  something sweet.

Recipe: Sugar Cookies

You’ll need:

For the cookies –
4 1/2 cups of flour
1/2 cups of sugar
3 sticks of unsalted butter, room temperature
1 tablespoon vanilla extract
4 eggs
1 teaspoon salt
4 tablespoons baking powder

For the icing –
4 cups of powdered sugar, sifted
4 tablespoons of cream or milk
1 teaspoon vanilla extract
2 sticks of unsalted butter, room temperature
pinch of salt
1 container red food coloring

Preheat oven to 350 degrees. Beat sugar and butter in mixer with paddle attachment until light and fluffy. In a separate bowl, combine flour, salt and baking powder. Mix in eggs, one at a time. Add vanilla, and then slowly, mix in the dry ingredients. Refrigerate for one hour.

Line two baking sheets with parchment paper. Use standard ice cream scoop to measure dough, and form into a ball. Pat down the ball and cook in the oven for 12-14 minutes. Cool on wired rack.

Once the cookies are cool, combine icing ingredients in mixer with whisk attachment. Beat for 5-7 minutes until light and fluffy. Use Wilton 1M for rose shape. Start in the middle, and pipe clockwise, 4 times.
