There is something special about a rich, moist, vanilla cupcake, speckled with Oreos, topped with a vanilla bean frosting and drizzled in Oreo crumbs. But what that something is… I just don’t know. No, wait I do… They taste amazing!
Oh so Oreo Cupcakes:
- 125g plain flour
- 150g self raising flour
- 2 eggs
- 1/2 teaspoon baking powder
- 125ml full fat milk
- 225g caster sugar
- 125g softened butter
- 1 teaspoon vanilla extract
- 3 tablespoons Oreo crumbs
- Preheat your oven to 180 degrees.
- Line a 12 cake, cupcake pan with cases and pop a full Oreo into the bottom of each.
- Cream the butter and sugar until light and pale.
- Beat in your eggs one at a time, until the yolk has disappeared.
- Sift the flours and baking powder together.
- Add the vanilla to the milk.
- Add the half the dry ingredients and half the wet and mix. Repeat until you have all the ingredients together.
- Add your Oreo crumbs and fold into the mixture.
- Fill your cases until about 2/3 full and pop in the oven for 20-25 minutes until golden on top and your cake test comes out clean.
Oreo Frosting:
I am partial to making this two ways. You can either leave it a vanilla bean buttercream and sprinkle Oreo crumbs on top. Or you came mix the Oreo crumbs into the buttercream. If you do the latter, the buttercream will turn a greyish colour, just the dust mixing with the buttercream.
- 227g unsalted soft butter
- 400g sifted icing sugar
- 2-6 tablespoons of milk. I usually add 2 to start and then add more to make the buttercream fluffier. It will all depend on how soft your butter was at the start.
- Start by beating your butter until very soft and pale.
- Gradually add the icing sugar and 2 tablespoons of milk. Continue to a cup of icing sugar at a time until all mixed or you have the consistency you like.
- Fold in your crumbs and pipe.
- Or pipe and then sprinkle on the crumbs!
And there you have it. “Death by Oreo”. These never last long in my house when I make them, I have even had Dolly try persuade me “theyare a breakfast really… if you think about it?” I am still thinking on that one… Serve with a tall glass of milk and enjoy!
