Chicken And Shitake Mushroom Rice
3Ib organic free range chicken
7oz Shitake mushroom (remove stem and cut into half)
5 tbsp organic soy sauce
1 tbsp dark soy sauce
2 tbsp Shitake mushroom paste (optional)
1 tsp five spice powder
1 tbsp chopped ginger
1 tsp white pepper
Sea salt to taste
2 tbsp sesame oil
3 tbs olive oil
1 cup water/chicken stock
6 cups cooked long grain rice
Heat sesame and olive oil in pan on medium heat. Add chicken, ginger and five spice powder. Stir well and cook until fragrant. Add both soy sauce, water/chicken stock and pepper. Cover and simmer for 5 minutes. Add Shitake mushroom paste (optional) and slice Shitake mushroom and cook for another 5 minutes.
While the chicken is cooking, loosen the cooked rice and set aside. Combine the chicken mixture into the rice well together. Test taste. Add salt to taste if needed. Pour the rice mixture back in the rice cooker. Slightly press the rice together and smooth the top. Cook in the rice cooker for another 10 minutes and the bottom is slightly crispy brown.
