The ambrosial smell of sweet, ripe fruit with a maple-syrup
granola topping drifted through the house, enchanting the guests with the best
smell of summer.
After all, summer is the time for fruit. Do you know what
other time it is? Its time for another Skinny Bitch Tuesday, of course! This
week, we focused on Kim’s Peach Crisp recipe. Talk about perfect timing,
right? Her recipe is fresh and fabulous, using lots of natural sweetness to
enhance the flavor of the fruit. I was inspired by this, and decided to make a
Nectarine, Blackberry, and Blueberry Crisp for you guys.
I cook fruit with maple syrup and a delicious crunchy oat
topping until bubbling and ready to burst with deliciousness. Served warm (and
you can even splurge with a scoop of ice cream if you want!) this fruit crisp
is addictive. The ripe fruit brings so much natural sweetness, and using a
combination keeps things interesting. Te nectarines are sweet and light, while
the blackberries add a depth of deep, rich flavor. The blueberries add some pop
and a burst of juicy warmth. Mmmmm.

Nectarine, Blackberry, and Blueberry Crisp (Skinny Bitch Tuesday)
Serves 4 Serving Size: 1 square Calories/serving: 250
Ingredients:
- 2tbl warm honey
- 1tbl lemon juice
- 1c. fresh blackberries
- 1c. fresh blueberries
- 2c. fresh yellow nectarine slices
- 2.3c. rolled oats
- 1/2tsp salt
- 1/4tsp vanilla extract
- 1/3c. sugar free maple syrup
- 2tbl light margarine (such as Smart Balance Light), melted
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- Combine the honey and lemon juice.
- Spread the nectarines evenly in a 13×9 inch baking dish. Pour the honey-lemon mixture over the nectarines. Evenly spread the blackberries and blueberries in the pan on top of the nectarines.
- In a medium bowl, combine the oats, salt, vanilla, maple syrup, and margarine. Evenly spread the oat mixture on top of the fruit.
- Bake 30-35 minutes, or until the top is golden and the fruit is bubbling. Can be served hot or cold.
