Slow Cooker Chicken Tacos

This is the easiest dinner to throw together & the chicken just melts in your mouth! It also smells incredible when you walk in the door after a long day at work, or running around to after school activities with the kids. Serve the chicken in tortillas or my favorite, butter lettuce cups, & top with avocado slices, salsa, jalapeños, & cilantro, with a squeeze of lime.

INGREDIENTS

2 LBS boneless, skinless chicken thighs & breasts
3 cups canned diced tomatoes, juices included
2 small cans diced, green chilis
1 onion, diced
4 cloves garlic, minced
2 tablespoons cilantro, chopped
1 tablespoon cumin
1 tablespoon chili powder
2 teaspoons coriander
salt & pepper to taste
cayenne or red pepper flakes (optional)


PREPARATION

Place all of the ingredients in a slow cooker, turn on low, & cook for 5 hours. Remove the chicken, shredding apart with 2 forks, & return to the sauce, cooking an additional hour.
