Apple Blueberry Chocolate Crisp
I love single serving recipes. They are quite easy to make and perfect for sweet cravings without over indulgence. I get very tempted when a recipe is a success and there’s little I can do to control my hands as it has a mind of its own. The recipe is quite simple to make and can be done from start to finish in little under 5 minutes and are quite handy when you need to impress your guests with fresh individual serving desserts. There’s an old saying “An apple a day keeps the doctor away” and as a child I’ve heard it million time from my mom and I hated apple just because it was used in the same sentence with doctor. If I use the same line with my kids I’m sure they’ll scoff me of as silly and I have to be more creative in using fruits subtly incorporated in desserts. With our busy lifestyle and every growing empire waistline I find recipes like this one to be a boon which can be put together with very few ingredients in very short amount of time.

Peel apple and thinly slice apples. Place sliced apples, 1 Tbsp brown sugar, 1 Tbsp chocolate , 1/8 cup of blueberries, 1/2 Tbsp flour, 1/8 tsp cinnamon powder in a mixing bowl.

Coat the apple with all the ingredients and place them in a microwave safe bowl. Mix together the remaining 1 Tbsp flour, 2 Tbsp rolled oats, 1/8 tsp cinnamon, 1 Tbsp butter. Add them on top of the microwave dish on top of the apple mixture. Microwave on high for 60-90 seconds. Serve hot as is or with a scoop of ice cream. Enjoy!!!

Ingredients

  • Apple (I used gala apple) — 1 small
  • Blueberries — 1/8 cup
  • Chocolate (sliced or chips) — 1 Tbsp
  • Brown Sugar — 2 Tbsp
  • Oats (I used rolled oats) — 2 Tbsp
  • All Purpose Flour — 1 1/2 Tbsp
  • Cinnamon Powder — 1/4 tsp
  • Butter (Room Temperature) — 1 Tbsp

Instructions

  1. Peel apple and thinly slice apples. Place sliced apples, 1 Tbsp brown sugar, 1 Tbsp chocolate , 1/8 cup of blueberries, 1/2 Tbsp flour, 1/8 tsp cinnamon powder in a mixing bowl.
