Maca Pumpkin Mochaccino [Vegan]

It’s that time of year again.. blustery and cold, with unforgiving winds that makes me want to stay in bed all with a big mug of hot chocolate and my favorite book. Unfortunately life will not allow that, but we can still enjoy a delicious and warming cup of something sweet to soothe those winter chills!!

I whipped up this cup of coffee after my limbs almost froze off at work this morning, but it’s not just any cup of coffee! It is loaded with energy-boosting nutrients, antioxidants and healthy fats, so rich and creamy it felt like I was sipping on a sweet mocha-flavored cloud. Heaven.

Serves 1

You will need:

6-8 ounces brewed coffee
1/2 tsp maca powder
1/2 tsp lucuma powder
1/2 tsp cacao powder
dash pumpkin pie spice
or use pumpkin flavored coffee!
additional sweetener of choice, to taste
steamed & frothed full fat coconut milk

Directions:


Place the coconut milk in a small sauce pan and heat over medium until it begins to steam, then remove from the heat and froth with a milk frother or immersion blender.
Brew your coffee.
Place the maca powder, lucuma powder, cacao powder and sweetener in a mug, then pour in the coffee.
Use a milk frother or immersion blender to dissolve the powders into the coffee.
Pour some of the frothed milk into the coffee and relax with your delicious mochaccino!
