Apple & Walnut Cake

I’ll admit that I snack. A lot.  So part of my healthy cooking journey has been about creating easy, healthy snacks that I can eat throughout the week.  This is a really yummy apple and walnut cake that I often have as a morning snack, it’s really delicious topped with some nut butter!

Ingredients:

1 cup rolled oats

½ cup walnuts

2/3 cup almond milk (or another milk if you prefer)

½ tsp baking soda

1 tsp cinnamon

2 tsp honey (or other sweetener)

1 apple, chopped (leave the skin on to get extra vitamins and minerals!)

Method:

Preheat oven to 180°C (360°F) and grease a loaf-sized baking tin.

Combine oats, walnuts, and almond milk in a food processor and blend until smooth and free of lumps.  Add all other ingredients, mix well, and pour into greased loaf pan. Easy!

Bake 30-40 minutes until a knife inserted into the center comes out clean and the top is browned.  This is a simple cake that I find is best warmed with some nut butter or jam on top. Enjoy!
