This is a light, crunchy little number that is bright and palate cleansing. It would pair well with SO MANY things. It’s great little salad on its own, but it would make a great crudités for your wine, cheese, and fruit plate. Or the perfect side to your rich bbq. Or even a great topping for your street tacos. I love a versatile dish!! Plus it comes together in a snap!
LEMONY CUCUMBER SALAD
- 1 cup thinly sliced radishes
- 1/2 cup finely chopped orange bell pepper
- 1/4 cup chopped fresh flat-leaf parsley
- 2 English cucumbers, thinly sliced (about 6 cups)
- 1 teaspoon finely grated lemon rind
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 1/2 teaspoons white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
DIRECTIONS: Combine first 4 ingredients in a large bowl. {I use a hand-held mandolin to make quick work of this part!}
Combine lemon rind and remaining ingredients in a small bowl, stirring with a whisk. Pour over cucumber mixture; toss well to coat.
Serve at room temperature or chilled.
