Cinnamon And Apple Slices
All credit for these cinnamon and apple slices must go to my very special Granny Peek. I am not proud of my years of stinginess with this recipe, though if you have a taste you will understand why. Holding the secret to making these made me feel rather indispensable.  Now that I have grown up, I have decided to share with everyone – please do my granny proud.PS. This recipe also makes a lovely apple pie – follow all instructions except assemble in a pie plate.

Ingredients

Makes 8 good sized slices

2 cups flour
½ cup sugar
2 teaspoons baking powder
125 g butter
1 egg
salt
vanilla essence
water (a little if necessary)

1 tin pie apples
4 heaped tablespoons treacle sugar
4 heaped teaspoons cinnamon

What needs to be done

  1. Cream butter and sugar, add vanilla essence.
  2. Add flour, baking powder and salt slowly.
  3. Add beaten egg. If still too stiff, add a little water. Dough should look moist but still be crumbly.
  4. Press half the dough into the pan.
  5. Mix apples, cinnamon and treacle sugar and add to pan.
  6. Sprinkle and dot remaining pastry on top of the apples.
  7. Bake at 200º C for about 20 minutes.
  8. Dust with icing sugar if you like.
