I just got back from a trip in Kerala. It’s good to be back in my kitchen, listening to my own country songs and cooking my kind of food, comfort food. 15 minutes. Quick and flavorful, just how I like it, just how I always cook.
I put rice in the rice cooker, this will take about 10 minutes or so to be hot, fluffy and soft. And while the rice is being cooked, I just stir fried some minced chicken with garlic, onion, dried chili, and the result is this comforting chicken on top of hot rice.
Stir Fried Chicken with Soy Sauce
Ingredients:
400 gm minced chicken
2 cloves garlic- roughly bruised
1 onion- sliced
3 whole dried red chili
2 tbsp oil
1 tbsp soy sauce
½ tbsp
1 tbsp oyster sauce
½ cup chicken stock
1 tsp sugar
Preparation:
Heat oil in a large pan over medium-high heat. When the oil is hot, add dried red chilies. Remove them from the oil as soon as they turn glossy black.
Add garlic and onion to the oil. When the garlic becomes aromatic, add chicken. Stir for 30 seconds or so.
Season with soy sauce, oyster sauce, fish sauce and sugar. Add chicken stock and cook further until half of the stock is reduced.
Add the fried chilies back into the chicken and stir well.
Serve the chicken on top of cooked rice, and if you like it, fried egg on the side.
