Who else is a huge fan of Pumpin Pie? Actually, I love almost anything that is pumpkin. It also makes a super delicious and super EASY pumpkin pie! These are perfect for Thanksgiving dinners, and fall get-togethers! I love making Pumkin Pie Bites they are great for gatherings or to take into the office for a treat.

Pumpkin Pie Bites Ingredients
All you’ll need is 30 oz of pumpkin pie mix, eggs, evaporated milk, refrigerated pie crusts, and whipped cream.

Pumpkin Pie Bites 3 Circles
Roll out your pie dough and cut 3″ circles out of it.

Pumpkin Pie Bites Pie Shells
Place each circle into a mini muffin tin and form into a small pie crust.

Pumpkin Pie Bites Pumpkin Mix
Mix pumpkin, eggs and evaporated milk together until well blended. Fill each mini pie shell with pumpkin mix, and bake for 15 minutes, then reduce temperature to 350 and bake another 20 minutes or until toothpick inserted in middle comes out clean.

Allow to cool completely on wire rack, top with whipped cream, and voila! A neat, easy to eat, easy to clean pumpkin pie!

Pumpkin Pie Bites

Ingredients

  • 30 oz Pumpkin Pie Mix
  • 2 Eggs
  • 5 oz Evapoated Milk
  • 2 Refrigerated Pie Crusts
  • Whipped Cream

Instructions

  1. Preheat oven to 425.
  2. Roll out pie dough and cut 3″ circles out of it.
  3. Place each circle into a mini muffin tin and form into a small pie crust.
  4. Mix pumpkin, eggs and evaporated milk together until well blended.
  5. Fill each mini pie shell with pumpkin mix.
  6. Bake 15 minutes, then reduce temperature to 350 and bake another 20 minutes or until toothpick inserted in middle comes out clean.
  7. Allow to cool completely on wire rack.
  8. Top with whipped cream.
