A treat for one! The recipe does not make just one but sometimes dressing up a treat with smooth Greek yogurt and a blushing red strawberry really puts a smile on your face or a loved one’s. It is nice to give the kids a petite treat on their own cake stand when they have completed something well, be it at school, sports or just because they are extra cute today!!
These cocoa brownies are fast and simple requiring pantry staples only. Good when you have to make something for the next day and you can’t get to the store for proper chocolate etc. I have a few recipes like this and they have their own good points so I will slowly add them to the blog.
Basic Cocoa Brownies
- 1 stick butter (melted)
- 1 cup sugar
- 1 Tablespoon cooking oil (any mild tasting will do)
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup plain flour
- 1/3 – 1/2 cup baking cocoa (i used 1/3 as I had mistakenly bought the extra dark cocoa – that’s why they look almost black)
- Large pinch of salt
Heat oven to 350 F
Line a 8″ square pan with baking paper, leaving an overhang so you can lift the brownies out of the pan
Using a beater, beat the melted butter, oil and sugar for about 2 mins and then add eggs and vanilla and beat for further 2 minutes so it is lighter in color.
Using a wooden spoon or spatula fold the remaining dry ingredients into the wet being careful not to overmix. Then pour into lined pan.
Cook for 25 – 28 mins depending on whether you prefer a fudgier or more cakey consistency. Cool in pan, then remove to cut into desired sized squares.
Delicious with yogurt or whipped cream….
