This week our oldest son let me know he wanted to clean up his eating and wanted to focus on going “Paleo.” It was just a couple weeks ago he was asking if I would make him Taco Salad like other kids got to eat. You know the Taco Salad with lettuce, tomato, CHEESE, CATALINA DRESSING, AND DORITOS. My kids had never complained about our taco salad in the past, but they’d never seen, nor tasted the other side before. Our oldest tasted the other side at a homeschool gathering and the sugar, glutamates, and salt drew him. He then came home and asked me if I knew how to make that type of salad.
Yes, I do know how to make it, but I choose not to because I don’t think it’s good enough for my peeps.
In an effort to dress up our taco salad, I decided to create a homemade avocado dressing.
This was super simple.
Place 1 large peeled avocado in a blender.
Add 1-2 cloves of minced garlic.
Squeeze in juice from 1/2 of small lime
Squeeze in juice from 1/4 of lemon
Sprinkle in a little kosher salt and adjust to taste.
Turn on blender and begin drizzling in water until avocados reach desired consistency. Go a bit thinner for salad dressing and a bit thicker for a dip.
The acid from the lime and lemon keeps the avocado dip/dressing from turning brown. It stays this nice green color even after a couple days.
I haven’t purchased taco seasoning packs in quite awhile. It’s so easy to just create your own flavorful taco meat without all the preservatives.
Taco Seasoning
After browning the ground beef, drain fat and add:
Chili Powder (a generous amount like 1-2 tablespoons)
Ground Cumin (again generous)
Oregano (couple teaspoons)
Garlic Powder
Granulated Onion
Kosher Salt
Add 1/4 – 1/2 cup water and allow flavors to meld.
Adjust the seasoning to your tastes.
