Buffalo Chicken Meatballs

Looking for the perfect game day snack? Let’s be honest, we love everything “buffalo” flavored but chicken wings can get pretty old, pretty fast and we all hate looking like “baby’s first birthday,” afterwards with buffalo sauce all over our hands and face. BTW, if you don’t get buffalo sauce all over your hands and face – you’re doing it wrong…

If you are craving the flavor but not the wing, try these buffalo chicken meatballs. All the flavor, no mess? Even better!

Buffalo Chicken Meatballs

What You Need

1lb ground chicken

½ cup almond flour*

1 egg

¼ red onion, diced very small

2 cloves garlic

Salt + pepper, to taste

2 tbs Frank’s red hot + ½ cup Frank’s

½ cup Bleu Cheese dressing

What to Do

  1. Preheat oven to 350°
  2. Combine ground chicken, almond flour, egg, red onion, garlic, salt + pepper and 2 tbs Frank’s in a large mixing bowl. Mix well with your hands to incorporate.
  3. Roll ground chicken into balls and line a baking sheet.
  4. Bake for 18 minutes.
  5. Remove meatballs from oven and transfer to glass baking dish and top with ½ cup Frank’s. Bake for another 10 minutes.
  6. Dip in bleu cheese dressing if you like, and enjoy!

Beware – ground chicken does not have the same texture as ground beef. Because it is a different meat, duh. If you make this recipe knowing that these meatballs won’t have the same consistency as a beefy meatball, you are bound to like them even more. And if you aren’t sold the first time, don’t worry – ground chicken will grow on you!

*if you aren’t paleo or aren’t gluten free – sub breadcrumbs for almond flour.
