Muesli And Apricot Crunchies
Thanks to a need for something a bit more  wholesome after a bout of very indulgent baking we have a tin of these in our pantry. I don’t expect them to last more than 3 days though. I used a luxury muesli which included, among lots of other yummies, some cashews and almonds (it had more of a granola flair to it) and some dried apricots which give such a lovely unexpected zang here and there.Crunchies are one of those things that you cannot leave out on the kitchen counter because it’s so tempting to take one or two out every time you walk past and then you find you don’t feel like supper – Monkey is very good at this. Everybody loves crunchies so make lots to share.

Ingredients

Makes 20 squares

2 cups muesli
1 cup oats
1 ½ cups coconut
2 cups flour
200 g dried apricots, chopped
1 ¾ cups brown sugar
4 tablespoon golden syrup
250 g butter
1 teaspoon bicarbonate of soda
1 teaspoon cinnamon

What needs to be done

  1. Mix the muesli, oats, coconut, flour, apricots and 1 cup of sugar together in a bowl.
  2. In a saucepan melt together ¾ cup sugar, syrup and butter.
  3. Add the melted mixture to the dry ingredients and mix well.
  4. Press into a greased baking sheet.
  5. Bake at 180 ºC for 15-20 minutes.
  6. Once cooked, wait a couple of minutes and then cut into squares while still warm.

Syrupy crunchie yummikins!
