By using sweet white chocolate pudding, fluffy whipped cream, and fresh raspberries, my Raspberry White Chocolate delight is the perfect dish to share with your sweetheart (or with a friend, your sister, yourself… it tastes delicious regardless)! This quick-to-make yet enchanting-to-eat dessert combines fruity with creamy to create a fun and satisfying treat!
Who ever said that pudding couldn’t be elegant? This recipe proves them wrong! Pudding is no longer just for the kids, because this dessert pleases people of all ages! I make the pudding a bit lighter by using half skim milk and half almond. You can use all skim if you would like, but I recommend doing 50/50!
Raspberry White Chocolate Delight
Serves: 2 Serving Size: 1 parfait Calories/Serving: 200
Ingredients:
- 1 (1-oz) container of sugar-free White Chocolate pudding mix (I use Jello Brand)
- 1c fat-free milk
- 1c unsweetened almond milk
- 1/2c cool whip free, slightly thawed
- 1 and 1/2 cups fresh raspberries
Instructions:
- Make pudding according to package directions, substituting in skim milk and almond milk for the liquid ingredients. Allow to set.
- Once pudding has set, line up two clear parfait (or other relatively thin) glasses. It’s time to start the layering process! Place 1/2c. of the pudding in the bottom of each glass, followed by 2tblcool whip and 1/2c raspberries. Top with another 1/2c. pudding, 2tbl cool whip, and 1/4c. raspberries.
