Low Carb Minty Chocolate Chip Thick-Shake

After the gym, I’m often craving something refreshing, but also satisfying enough to refuel my muscles and keep me full. This thick-shake definitely does the trick!! It tastes like your favorite mint chocolate milkshake, but isn’t loaded with tons of sugar and unhealthy fats. You can fully enjoy it without any guilt, knowing you are giving your body some amazing nutrients. While this smoothie is low in carbs, it is chuck full of amazingly healthy fats, protein and fiber!

This is absolutely my new favorite smoothie, I hope you like it too!

Serves 1

You will need:

1/2 ripe avocado
1 small green zucchini, chopped into small pieces
1 scoop vanilla protein powder (30-40g)
4 ice cubes
1/2 cup cold milk (any will do, I used So Delicious Unsweetened Coconut)
1/2 cup cold water
sweetener, to taste (I used about 10 drops liquid Stevia)
1 tsp psyllium husks (optional)
1/4 tsp mint extract
dark chocolate chunks

Directions:
Place the avocado, chopped zucchini, protein powder, ice cubes, milk, and water into your blender.
Process until smooth.
Add the sweetener, mint extract and psyllium husks (if you’re using them) and process again for about 30 seconds.
Pour into a glass and top with the chocolate chunks.
