Asian Salad With Spicy And Sweet Peanut Dressing
First of all, sorry for the quality of a picture in this post, I still can’t seem to find a way to take a decent picture with my DSLR at night when I make something worth sharing at that kind of hours. So I took a picture of this delicious salad with my cell phone.

This recipe is a hit. The dressing is delicious. It’s my favorite kind of flavors— sweet, spicy, savory and nutty in one bite. Now all you need is a bag of salad greens, some fresh mint and some protein.

Asian Salad with Spicy and Sweet Peanut Dressing

Ingredients:

A bag of salad green

1 1/2 cup cooked rice noodle

1 cup cooked chicken (I cooked mine with garlic, soy sauce and white pepper.)

10 crab sticks – steamed for 2 minutes.

A handful of fresh mint leaves

2 green chilies chopped

½ cup vinegar

3 tbsp sugar

1 ½ tbsp fish sauce

Juice of 1 lime

3 tbsp peanut butter

Preparation:

To make a dressing, melt sugar in vinegar. When the sugar is melted, turn off the heat and add peanut butter. Whisk until smooth, add lime juice, green chilies and fish sauce to taste.

In the mixing bowl, add the layers of salad greens, mint, noodle, chicken and crab stick. Pour the dressing over the salad and toss well. Serve and enjoy.
