Whenever I get overwhelmed with visiting and things, we turn to quick meals. Most of them are on this blog already and are our family favorites. But every now and again, we get introduced to something that is absolutely amazing and blows anything I can make out of the water. Enter…Slather it On! This is one of the many vendors we met at the Charleston Food + Wine Festival. But it was the ONLY vendor that John stood in line for to eat their meatballs again and again. I wish I was kidding.
The sauce is a sweet and spicy blend of honey, pineapples, tomatoes, crushed red peppers and some delicious gourmet spices and their slogan “The Cure for Boring Food” really does speak the truth. You can find some at your local market here! John couldn’t stop talking about it and it’s hard to tell who was more excited when we got to play with the sauce ourselves: him, to eat it, or me, who didn’t have to hear about it anymore! They have a ton of recipes on their own website and I was inspired by their creativity! I immediately dove in with this pizza – a new and exciting twist to our Friday night tradition!
Pulled Chicken & Pepper Pizza
Serves: 4 (1 pizza)
1 chicken breast
1 1/2 cups Slatherin’ Sauce
3 tablespoons water
1 pizza dough
1/4 cup cilantro, thinly sliced
1 cup mozzarella cheese, grated
1 cup sharp cheddar cheese, grated
2 peppers, sliced thinly
Place chicken in the crockpot. Combine 1 cup sauce + water and pour over the chicken. Set on low and cook 4-6 hours until cooked through. Shred the chicken with two forks and stir back into the sauce.
Preheat the oven to 400 degrees F. Meanwhile, roll out the pizza dough onto a pizza pan. Top with remainingSlatherin’ Sauce and cilantro slices. Top with shredded chicken, cheeses, and peppers. Bake for 12-15 minutes until the dough is cooked and the cheese is melted. Serve immediately.
