Turkey-Zucchini Burgers

I came up with this recipe a few years ago, when my little man was a toddler & very picky eater. My goal was to get as many veggies into him as I could without him knowing it–every mom’s wish! Well, he loved them, still does, & they turned out to be one of my most favorite burger recipes! The zucchini keeps the patties perfectly moist & juicy, & the turkey from drying out. It’s a great, busy weeknight dinner paired with a side of greens. You can also grill these if you have the time. Serve in a bun or my preferred way, as lettuce wraps, with a little homemade garlic aioli.

INGREDIENTS

1 LB ground turkey (white & dark meat mix)
1/4 cup breadcrumbs (almond meal works as a great sub, if you’re avoiding gluten/carbs)
1/4 cup grated zucchini
1/2 onion, finely chopped
1 teaspoon dried thyme
1 teaspoon garlic, minced
salt & pepper to taste
olive oil cooking spray
PREPARATION

Preheat your broiler. Combine all of the ingredients in a large bowl & mix well by hand. Divide the turkey mixture into 4 equal portions, shaping each into about 1/2″ thick patty. Spray your broiler pan with cooking spray, & broil the burgers about 8 minutes per side, until the middle is cooked through.
