Steak With Mushroom Sauce
The weather is crazy here in Pune. It’s been cold, warm, and out of the blue, today it’s raining. All these feel very cozy, and I’m loving it. I have more time to spend in my kitchen. The boys love that I cook abundantly every day. We make a heavy feast for supper, and in the morning I pamper them with waffles and pancakes.

Okay, now I realizethat with all these cookings, I have been gaining weight. I need to start working out again to be able to get rid of the extra calories I’ve been indulged all day. Sadik also suggested me adding more veggies and salad in our diets, but let’s be honest here; we love carb, meat and greasy deep fried food. And oh it’s definitely not so easy to lose weight when we eat steak on regular basis.

A simple pan-grilled fillet steak with mushroom sauce is a regular menu in my house. Sadik is not a fan of red meat, but Yaseen and I are crazy about it. I love a nice medium steak, but here in India, a good quality meat is very difficult to come by. The meats in the market tend to be rubbery and not suitable for steak. I only use them in curry and stew. For steaks, I buy the restaurant grade cuts which are not cheap. But still we think a meal like this is worth saving the money for.

I made sauté vegetable with herbs for a side dish with load of butter and a bit of garlic. Cauliflower Mash, another side dish, is easy to make. I just blend baked cauliflower with a generous amount of butter in a food process until smooth.

Mushroom Sauce

There is so many version of mushroom sauce out there, and here is mine…

Ingredients:

200 gm white button mushroom

2 onions- finely chopped

2 cloves garlic- minced

1 tsp ground black pepper

2 tbsp Worcestershire sauce

1 tbsp balsamic vinegar

2 cup vegetable stock

1 cup fresh cream

2 tbsp butter

1 tbsp corn flour- dissolved in a little water

Preparation:

In a medium sauce pan over a medium heat, melt butter and sauté onion until soft. This should take about 10 minutes or so.

Add garlic and fry further for a couple of minutes.

Add mushroom, Worcestershire sauce, and balsamic vinegar; and cook until the mushroom is soft.

Add vegetable stock and black pepper, bring to boil, and simmer for 10 minutes.

Thicken the sauce with corn starch solution. Check the seasoning and remove from the heat.

Pan-Grilled Fillet Steak

500 gm fillet steaks

Salt and pepper for seasoning

1 tbsp olive oil

Preparation:

Season the steak with salt and pepper, and let it rest for 5-10 minutes.

Heat the pan with some olive oil over a medium-high heat.

When the pan is hot add the steak, cook for 1 minute on the high heat and 2 minutes on the medium heat on each side. This way you will get a crisp outside and a tender and juicy texture on the inside.

To assemble the dish…

Serve steak with sauté veggies, mashed cauliflower, and mushroom sauce on the side.
