Spiralized Sweet Potato Waffles

There are only 2 ingredients in these absolutely delicious waffles, and NO flour (not even coconut!) in sight! If you’re trying to eat paleo, Whole30 or just want to simplify your current diet to include only whole foods and cut out refined sugar, these waffles are for you! I love sweet potatoes because they can be paired with both sweet and savory foods. Perfect for those mornings when you can’t choose – the best of both worlds!

Spiralized Sweet Potato Waffles 2

Serves 1

You will need:

100-150g spiralized sweet potato (about 1 small potato)
1 egg
spices, to taste

Directions:


Preheat your waffle iron and liberally coat with coconut oil.
Wash, peel and spiralize your sweet potato.
In a pan, melt a bit of coconut oil over medium heat and saute the spiralized potato until it softens, about 5-10 minutes.
Whisk the egg in a bowl, then toss in the spiralized sweet potato until fully coated.
Add any spices you want (cinnamon is delicious) and mix until incorporated. I used my hands.
Stuff the mixture into your waffle iron and let it cook until the waffles are nicely browned and firm.
Remove and top with whatever you want – a fried egg with spinach and arugula, or nuts, nut butter and fruit!
