Potato Vegetable Omlet
I’m not a morning person, sometimes I wonder if I’m even an afternoon person! So, I’m not responsible for things that come out of my mouth right after you wake me up. Weekdays are always a whirlwind running around to push my kids (my husband included) out of the house but weekends are a different story. Somehow, my body refuses to acknowledge that I can get up early and many times we end up lazing around for more hours making me skip breakfast. But the growling stomach just doesn’t give me time to make any elaborate lunch hence the need for a quick brunch.

This recipe is semi-homemade and is so easy and quick to make yet very filling. I used the ready-made tater tots but they can be substituted with hash browns too. I used my waffle iron to make this recipe but if you don’t have a waffle iron they can also be made in a deep pan over stove top. The choice of vegetables can be as varied as one’s taste and as a variation cheese such as pepper jack can be added to give the dish an extra zing. Enjoy!!!

In a small bowl beat eggs with a hand mixer attached with whisk attachment until light and fluffy. Add salt and pepper to taste. Set aside.

Heat waffle iron and once hot, spray non-stick cooking spray on both top and bottom plates. Pour egg mixture on the bottom plate. Make sure the egg doesn’t overflow. If your waffle iron is small then pour only half of the egg mixture, just until it thinly coats all entire plate. Sprinkle vegetables evenly over the egg. Arrange tater tots on top. Cover the waffle iron and let it cook until the egg and potatoes cook completely and the potatoes turn golden brown and crisp. Carefully remove from the waffle iron and plate it in a serving dish. Serve hot. Enjoy!!!

  • Zucchini — 1 small (cut into small cubes)
  • Red Bell Pepper — 1 small (cut into small cubes)
  • Frozen Tater Tots — about 20

Notes

If you don’t eat egg, then add tater tots,veggies, and cheese.
Egg whites or egg substitutes can be used instead of eggs. ,
This recipe can be made in waffle iron, panini maker,quesadilla maker or in stovetop.
