Salted Caramel Hot Chocolate

It’s raining, it’s pouring… I wish I was in bed still snoring (which I don’t do, of course ).  Last week we got a lot of rain in LA and we’re supposed to get some more this next week.  And while some people hate the gloomy weather, I am basking in all of it’s glory.

We had such a hot summer and fall, for that matter, and these overcast chilly days are much welcome if you ask me.  I love how angry the rain and wind makes the ocean look, especially against the dark skies.  I’ve been meaning to take a picture and post it on my Instagram so that you know just what I’m talking about.  And the smell of the grass and plants after the rain, it’s one of my favorite smells.  For some reason  it reminds me of childhood and all the memories that go along with that.

Want to know what else goes great with cold weather… hot cocoa!  Specifically this salted caramel hot chocolate.  It’s so thick and creamy, I mean the chocolate just coats you from the inside out.  It’s delicious and warming, sweet and comforting – just splendid!  I love nothing more than sitting inside, watching the rain come down, cupping a big mug of hot chocolate – with a tall tower of whipped cream, of course.

And what are those little chocolate squares with sprinkles in all the pictures you might be wondering?  Well, those are chocolate covered marshmallows covered in rainbow sprinkles from Shari’s Berries!  They reached out to see if I wanted to create a hot chocolate recipe to pair with their marshmallows – and how do you say no to that?!  It’s all part of a #hotchocolateparty (and now these are the only kind of parties I want to be a part of!)

So this salted caramel hot chocolate is what I’ve come up with.  And it’s delicious and pairs so well with the marshmallows.  And Shari’s Berries has been so kind to offer a discount code to my readers so that you can make this hot chocolate and enjoy it with your very own marshmallows.

ingredients
  • 4 cups milk (I used 2% – but you can use any fat percentage)
  • 6 ounces milk chocolate
  • 2 ounces dark chocolate
  • ¼ cup caramel sauce, plus more for drizzle
  • pinch of salt
  • whipped cream
instructions
  1. In a medium pot over medium heat, add milk, milk and dark chocolate, caramel sauce and salt.
  2. Let mixture warm, whisking occasionally, just until small bubbles start to form on the edges. You do not want to bring this to a boil.
  3. Once mixture is warm, ladle into glasses and top with whipped cream and drizzle with caramel sauce.
  4. Serve immediately.
