Greek Style Lamb Meatballs

I cook and eat lamb very infrequently, so these meatballs are a real treat. The flavor & smell is so nostalgic, it takes me back to Cyprus, the Greek island I grew up on. There’s something special about a certain food you have a childhood connection to. This is one of those meals which makes me feel like that little girl in braids again, running around the street until dark, & playing hide & seek with the neighborhood kids. These juicy, marinated meatballs are so good, you may want to double the recipe! Serve with store bought Tzatziki (Greek yogurt sauce.)

INGREDIENTS

1.5 LBS ground lamb
2 tablespoons fresh lemon juice
1.5 tablespoons olive oil
3 garlic cloves, minced
1.5 teaspoons fresh rosemary, finely chopped
1.5 teaspoons fresh oregano, finely chopped
salt & pepper to taste


PREPARATION

Place all the ingredients in a large bowl & mix well. Let marinade at room temperature for about 30 minutes. Preheat the oven to 375 degrees. Form the meat into 2-inch balls, & place on a foil lined baking sheet. Bake for 20-25 minutes, until no longer pink in the center.
