Cumin-Honey Radish Slaw

I love a great slaw in the Summer time, & in creating a cleaner version for myself, I decided to incorporate radishes, kick it up with cumin, & naturally sweeten it with a bit of honey. It turned out fabulous–fresh, peppery, & crunchy with a little zing! I like to serve this as a side for tacos or grilled proteins, & hope you enjoy is as much as I do.

INGREDIENTS

1 small bunch or pack red radishes, sliced
4 organic scallions, chopped
2 organic carrots, peeled & chopped
1 organic red bell pepper, chopped
1/4-1/2 head (depending on size) organic red cabbage, thinly sliced
organic cilantro, chopped, for garnishing
1/3 cup rice or apple cider vinegar
1/3 cup olive oil
1/4 cup fresh lime juice
1 tablespoon honey
1/2 teaspoon chili powder
1/2 teaspoon cumin
salt & pepper to taste


PREPARATION

Combine the vegetables in a large bowl & season with salt & pepper. In a small mixing bowl, whisk together the vinegar, lime juice, honey, chili powder, & cumin, & slowly drizzle in the oil, whisking. Pour the dressing onto the slaw, toss well to coat, & garnish with cilantro. Chill for at least 1 hour before serving.
