Fish Tacos With Mango Salsa
It’s Wednesday again and you’re in for another serving of delicious. This is a wonderful summertime recipe and it’s perfect for eating on the patio or the deck. Speaking of decks, our new deck is up and it is beautiful! It was a long two days but I’m so excited about the result. I will be putting up a post about the whole experience in the next little while so keep an eye out

As for this recipe, it’s light, healthy, bursting with flavour and is sure to impress if you’re having guests over.

  • 1 mango, diced
  • 1 tomato, diced
  • 1/2 cucumber, diced
  • 1/4 red onion, diced
  • 1/4 cup cilantro, shredded
  • 1 tablespoon Garlic Expressions classic vinaigrette*
  • Salt and pepper to taste

*This stuff is amazing! But if you don’t have it you can use 1 teaspoon olive oil, 1 teaspoon garlic,  and 1 teaspoon of apple cider vinegar.

Directions

  1. Are you ready for this? It is a little tricky. You have to mix all the above ingredients together. That’s it! You could stop here and serve with nachos but I used it for fish tacos.
  2. Shred some lettuce and put it on top of your tortilla, add your favourite white fish (I love tilapia) and top it off with your mango salsa. You can drizzle sriracha on top if you want to make it spicy.

Notes

Fish tacos are best with a coleslaw mix as the base instead of lettuce but, it being a Wednesday Night Kitchen Raid and all, I didn’t have any cabbage or carrots to shred so that’s how this recipe ended up with lettuce. Still delicious, but I would opt for the coleslaw mix if I could.
