Coffee Cake, The Healthy Way
With our fall weather quickly turning to winter, I’ve been living for the moments I get to curl up on the couch with some hot tea, coffee, a blanket, book, or even a really great chick flick.  And lately, along with that has come cravings for coffee cake.  Strange, to be honest, as I’ve never been much of a cake fan, let alone coffee cake.  My mom used to make this really great blueberry streusel coffee cake that I couldn’t get enough of so maybe that’s where this craving is coming from?  Either way, I was feeling determined to make some healthy coffee cake!  Unfortunately, (or fortunately in this case!) I couldn’t find a recipe that was truly fit in well with my nutrition plan, so I decided to create one!  And let me tell you, it turned out fantastic.1/3 c. oat flour*

1/4 c. coconut sugar

1/4 c. chopped walnuts

1/2 tbs. cinnamon

2 tbs. coconut oil

1 tbs. pure maple syrup

Batter Ingredients

1 ripe banana

1 c. oat flour*

1 c. almond flour

1 c. almond milk

1 tbs. flax seed + 2 tbs. water

1/3 c. coconut sugar

1/3 c. coconut oil

1 tbs. baking powder

1 tsp. baking soda

1/2 tbs. apple cider vinegar

1 tsp. vanilla

1/4 tsp. sea salt

1 tsp. cinnamon

*Make your own oat flour by grinding up old fashioned oats in a food processor or blender until it reaches flour- like consistency

Directions

First, preheat the oven to 350 degrees.  Combine all “Crumble/Filling” ingredients in a small bowl and mix thoroughly.

In a large bowl, mix all dry batter ingredients together including oat flour, almond flour, coconut sugar, baking powder, baking soda, sea salt and cinnamon.

In another bowl, mix together flax seed “egg” [flax seed and water] and let sit for 2-3 minutes.  Add banana and mash thoroughly – the trick I have found that works best is using a pastry blender!  Once the banana is thoroughly mashed, add in the remaining wet ingredients except for the vinegar – including almond milk, vanilla, and melted coconut oil.

Once everything is well combined, add the wet ingredients to the dry ingredients and mix thoroughly.  Finally, add the apple cider vinegar last as it will begin to react with the baking soda immediately!

Grease an 8×8 glass pan with coconut oil or cooking spray.  Layer in half of the batter and follow with half of the filling.  You can measure it out if you’d like, or just guess like I did!  Layer in the remaining batter and top it off with the rest of the filling.  Bake for 40-45 minutes or until a toothpick comes out clean.
