Summer is coming to an end! Womp womp! For me it’s bitter sweet. I’m loving the slightly cooler weather. Being very pregnant this hot weather and no air conditioning really puts a wedge in my party. We are gonna have a short heat wave this upcoming weekend where we reach the 90’s again so it’s hard to believe it’s September. Gardens in the PNW are starting to wrap up their production for the year which means my delicious tomatoes will soon be only a memory! My cherry tomatoes this year were so sweet and delicious. I’m going to miss them so! One of the yummy salads I enjoyed from the fruits of my garden was this yummy caprese salad. Inspired from one of my favorite bloggers greek farro salads I knew I had to throw my own italian twist on this salad. It turned out amazing. I could eat this everyday it was so delicious. The sweet tomatoes and crisp cucumbers keep you coming back for more.
This is an awesome salad to bring to those last minute summer BBQ’s or just to whip up a batch and enjoy the whole weekend. Most of the ingredients you probably have in your pantry too!

Caprese Farro Salad - Our Full Table
I like to prepare my farro the night before so it has time to chill in the fridge. I also do this with the dressing so the flavors have time to marinate and become one. Making the dressing the night before isn’t a deal breaker but I definitely recommend cooking the farro in advance.
