So yesterday I went grocery shopping. And to stick to being healthy, I tried my best to get fresh and healthy stuff. I got lots of greens, potato and pumpkin. The fresh cucumbers were juicy. I also got some mangoes and guavas as well. Something I rarely cook at home is couscous. I decided to buy a box of it. I don’t even know what I will do with it because I never really like couscous. But well, it’s healthy. I’ve got to try.
I want to eat healthy and not be miserable. It’s easy to incorporate the flavor that you like into the healthy spree. I like the flavor of mushroom. It’s earthy and delicious. I love the gorgeous green of spinach. Mushroom and spinach work well together, making this dish so comforting and delightful.
Mushroom and Spinach Couscous
Ingredients:
100 gm pearl couscous
100 gm mushroom- sliced
2 cups spinach- sliced
1 cloves garlic
1 tsp olive oil
Salt and pepper to taste
Preparation
Bring one liter of water to boil in a large pot. Add ½ tsp of salt in the water for seasoning. Add couscous and cook for 12 minutes. Drain and keep aside.
In a pan, sauté garlic in olive oil on a medium heat.
Add mushroom and stir for 2 minutes or until the mushroom is soft. You may add a little water if the mushroom becomes too dry.
Add spinach and give it a quick stir.
Add couscous and stir well.
Season with salt and pepper.
Serve hot.
