2 Tbspns olive oil
1/2 cup onions
1 clove garlic (minced)
2 cups favourite vegetables chopped (eg broccoli, asparagus etc)
4 eggs
1 cup heavy cream
1/4 cup fresh parsley or oregano
1-4 once can of diced green chilies
2 cups grated cheddar cheese (or Havarti)
Black pepper
Preheat oven to 350.
In a large nonstick skillet, heat olive oil. Add onions, minced garlic and vegetables. Heat until softened (about 5 minutes).
In a large bowl whisk eggs and heavy cream. Stir in vegetable and onion mixture along with the herbs, grated cheese and pepper.
Mix well, pour into a 9 inch pie pan and bake for 40 minutes or until a knife inserted in the center comes out clean.
