Bombay Veg Sandwich

I come from a place where rice and wheat are the staple food. Sandwiches are rarely provided as a snack smacked with jelly and butter. If you asked me to make a sandwich a decade ago I would have implicitly assumed and happily made a jelly sandwich. As the years went by, I’ve learned to appreciate many different varieties of sandwiches and have made my own version of sandwiches that’s tried and tested by my family. Some of the sandwiches that I’ve already blogged are broccoli-mushroom-bellpepper-melts, grilled-avocado-cheese, tomato-peach-ricotta, roasted-tomato-caprese, grilled-almond-butter-pomegranate and I’m sure the list will keep growing as my family seems to have a keen liking to sandwiches.

I tasted this sandwich at my friend Amishi’s house. She’s an adventurous foodie and being a bombaylite she’s pegged many of the street foods typically famous in Bombay right to the grain of salt in the recipe. I’ve tried many of her recipes and they’ve yet to fail me. So if you crave a typical Bombay sandwich you’ve come to the right place….common let’s go to the kitchen and gets this sandwich cooking. Step-by-Step Pictorial:

In a medium bowl mash boiled potatoes. Now add salt, garam masala powder, turmeric powder, amchur powder, green chilli-ginger garlic paste, and salt. Mix well until all the ingredients are well combined. In another bowl mix chopped onions, tomatoes, bell pepper, red chilli powder, and salt.

This sandwich can be made in electric sandwich maker or Panini maker or in stove top. I used a Panini maker and I’m sure no matter which appliance you use the taste will not vary. When ready to eat, place a slice of bread buttered on both sides on Panini maker, add mint chutney on the top side. Add potato filling on top of the chutney, spread evenly. Place another buttered bread on top of the potato filling, add chutney on both or one side of the bread before placing it. Add the tomato-onion-bellpepper mixture on top of this bread. Add a slice of pepper jack cheese on top of the veggies and place another buttered bread to close the sandwich. Press the Panini maker to make the line indentations. When the top and the bottom turns golden brown and the cheese is melted, remove the sandwich from the maker and cut diagonally. Serve hot with more green chutney, hot sauce or ketchup. Enjoy!!!

Bombay Veg Sandwich

Ingredients

  • Bread — 6 slices (I used sourdough, gives a nice crunch)
  • Onions — 1 small (chopped finely)
  • Tomatoes — 1 medium (diced into small cubes)
  • Bell Pepper — 1 small (diced into small cubes)
  • Mint Chutney or coriander chutney (home made or store bought) — as needed
  • Pepper Jack Cheese Slices — 1 for each sandwich
  • Salt — as needed
  • Potatoes — 2 medium numbers (boiled, skin peeled)
  • Garam Masala Powder — 1/2 tsp
  • Red Chilli Powder — 1 tsp (adjust according to taste)
  • Turmeric Powder — 1/4 tsp
  • Amchur Powder (dry mango powder) — 1/4 tsp
  • Green Chilli- Ginger Garlic Paste — make a paste of 1 green chillies, 1/2″ ginger, 2 garlic pods
