Cranberry Orange Oatmeal Cookies

The past week was incredibly humid in Boston. I’m officially ready to say that I’m excited for fall and the cool, crisp days. These cookies are perfecting for evoking the fall spirit. As they were baking, the amazing smell of the warm cranberries, cinnamon, and orange filled the apartment. Make them soon and enjoy the cookie-perfume throughout your home as well!

Ingredients

  • 1 cup butter, at room temperature
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon plus 1 teaspoon orange zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 3 cups rolled oats
  • 1 cup dried cranberries
  1. Preheat the oven to 350 degrees.
  2. In the stand mixer, cream together the butter, sugars, and orange zest.
  3. Beat in the eggs one at a time.
  4. Add the vanilla.
  5. In a separate bowl, combine the the flour, baking soda, salt, and cinnamon.
  6. Stir in the oats and cranberries.
  7. Drop by rounded tablespoons onto a parchment-lined cookie sheet. 
  8. Bake for 10-12 minutes in the oven. 
  9. Cool the cookies for 2 minutes and then serve!
