BBQ Hawaiian Pizza Burgers
Pineapple has always been one of my favorite fruits; literally since I can remember.  But when I was 8, I was knocked in the face with a softball at a family picnic (I know, right?!).  I lost one of my front teeth on top and chipped 2 of my teeth on the bottom half.  It caused a lot of problems for over 8 years.  I had trouble with foods that were too hot or alternatively, too cold.  I also couldn’t eat pineapple.  For. Eight. Years!

I got a root canal when I was just 16 and since then, it’s been back to eating hot foods, cold foods, and my favorite fruit again.  In fact, even though that was over 10 years ago, sometimes I forget that I’ve been eating pineapple for that long.  I just think about how many years I had to give it up for and how I should try to make up for those dark times in my life. When pineapples become seasonal (and cheap) I have to stock up and eat as much as possible to make up for these aforementioned 8 years…over 10 years ago.

It’s just one of those tricks that your mind plays on you: “Remember all the time you couldn’t have this?  You should have MORE!”  Anyway, at some point, your mouth burns from too much pineapple and you need a bit of a break.  That’s what happened when I came up with these burgers.  We had about 1/2 of a pineapple quickly rotting in the fridge.  Along with other leftovers (ham) and some delicious Slatherin’ Sauces, the BBQ Hawaiian Pizza Burgers were born, and boy were they good!  I can’t wait for summer when we have an excuse to make them every week!

BBQ Hawaiian Pizza Burgers
Serves:  4
Chicken Patty:
1 pound chicken
2 cloves garlic
1/2 onion, diced
1/2 cup breadcrumbs
1/4 cup Slatherin’ Sauces

Burgers:
4 slices pineapple
4 rolls
8 slices ham
12 tablespoons Slatherin’ Sauces

Make the chicken patties by grinding chicken, garlic, and onion in a food processor until well ground.  Stir in breadcrumbs and Slatherin’ Sauces.  Form into 4 patties.  Preheat the grill to medium heat.  Cook the chicken burgers about 6 minutes per side.  In the final 5 minutes, add the pineapple slices to the grill (cooking about 2 1/2 minutes per side).

Place a patty on each roll, top with pineapple slice, ham, and then 3 tablespoons ofSlatherin’ Sauce.  Serve immediately.
