The weather has been beautiful here in the northwest it makes me feel like spring/summer is almost here. This is the time of year I severely miss my garden. I love being able to walk out into the yard and pick whats for dinner. Pop a cherry tomato in my mouth. Mmmm…it’s almost here! This salad is one of my favorite things about summer. Grape tomatoes are my favorite thing to eat straight from the vine in my garden. Combine those with the crispness of a cucumber and sprinkle with balsamic vinegar. You can thank me later!This salad is so easy and flavorful you can whip it up in 5 minutes. I love balsamic vinegar. It does something magical to fresh garden produce. Throw fresh herbs into the mix and you’ve the perfect summer salad.
extra virgin olive oil
fresh cracked black pepper
Start by slicing your tomatoes in half and cucumbers in quarters.
In a bowl combine the tomatoes, cucumbers, herbs, balsamic vinegar, olive oil, lots of fresh cracked black pepper and sea salt.
I like to let everything marinade for 15-30 minutes and get happy.
Give it a quick toss and enjoy!
