I am a big time fan of any meal dealing with sweet potatoes. This savory sweet potato is delicious, easy to make, and reasonably healthy too! This recipe can serve between 2-4 people. It depends on how large your sweet potatoes are and if you’re willing share your potato!
Ingredients:
2 large sweet potatoes
1/2 of a white onion
3 sweet mini peppers
2 cloves of garlic
2 chicken breasts
salt and pepper (to taste)
smoked paprika (1 tbs)
crushed red pepper (to taste)
1 cup of frozen green beans
1/2 cup shredded mozzarella cheese
2 tbs olive oil
Instructions:
Prepare your sweet potatoes by washing them and removing any discolorations. Rub olive oil on the skin and then poke them with a knife. I put my potatoes, one at a time, in the microwave for 5-7 minutes. Or you can set your oven to 375° and bake your potatoes until a fork can go all the way through (30 mins or more).
While your potatoes are baking, chop your veggies and season your chicken with salt, pepper, and smoked paprika. Add your chicken and veggies, except for green beans, to your heated and oiled skillet.
Slice your chicken once it is almost cooked and put it back in the skillet. Then add your green beans and crushed red pepper (to taste) and turn your heat down to low.
When your sweet potatoes are cooked all the way through, carefully cut them open and scoop about 2 tbs out to make room for your filling.
Put in the oven and bake until cheese is melted.
