Apple German Pancake Pie
Fall is in the air and there is nothing I love more than baking with apples and pumpkin during this time of year. This is one of my favorite baked apple recipes. It’s a pie shaped German pancake that is filled with fresh cinnamon apple slices. Technically this is a “breakfast” recipe but it’s definitely on the more indulgent side so I’ve categorized it as a breakfast AND dessert recipe! Since it is more dessert-like, I make this for my family for breakfast on special occasions. It’s also a great recipe for a fall brunch or dessert.

Apple German Pancake Pie

Ingredients

    • 2 apples (I like Gala and Golden Delicious)
    • 1/2 cup butter
    • 1/2 cup packed brown sugar
    • 1 teaspoon vanilla extract
    • ground cinnamon
    • 3 large eggs
    • 3/4 cup milk
    • 3/4 cup flour
    • 1/2 teaspoon salt
    • powdered sugar for dusting

Optional Glaze

  • 2 cups powdered sugar
  • 1-2 Tablespoons milk
  • 1 teaspoon vanilla extract

Directions

    1. Preheat oven to 425 degrees.
    2. Place butter in a pie plate and melt in oven.
    3. Peel, core and thinly slice apples.
    4. When butter is melted, remove from oven and carefully stir in brown sugar and vanilla.
    5. Sprinkle generously with cinnamon.
    6. Place apple slices in the pie plate in a single layer so that the slices are standing up.
    7. Bake 10 minutes.
    8. In a medium bowl, beat eggs.
    9. Whisk in milk, flour and salt. Do not try to stir out the little lumps.
    10. Pour over apple mixture. Place pie plate on a jelly roll pan because the batter tends to overflow a little bit.
    11. Bake 20-25 minutes.
    12. Remove from oven and sprinkle with powdered sugar.
    13. Slice and serve. Individual slices can be drizzled with glaze.

Optional Glaze

  1. Whisk all ingredients together until combined. Add more milk if needed.
