The blog has a whole new look, I hope you like it! I’ve been on a bit of a hiatus while undergoing some preventative health measures. But I’m back now, stronger than ever and so ready to jump back into the kitchen! I’ve started off with these cookies – they are are rich and sweet, and if you love a coconutty flavor, these will be right up your alley!
Ingredients:
1 cup almond meal
2 Tbsp melted coconut oil
2 Tbsp honey (or chosen sugar substitute)
1 Tbsp almond milk
1 tsp vanilla extract
Pinch of salt
¼ tsp baking powder
¼ cup cacao nibs, dark chocolate chips, or raisins (optional)
Method:
Preheat oven to 170°C/340°F.
Combine dry ingredients in a bowl, mix well. Whisk together wet ingredients and add to dry mix until just combined.
You can create your own cookie here – add in raisins, nuts, cacao nib/dark chocolate chips, or even omit them for a more plain vanilla almond cookie. Roll into balls and drop onto greased cookie sheet (or line cookie sheet with baking paper). Press down lightly in center of each cookie.
Bake for 10-12 minutes until edges just start to turn brown. Remove from oven and let cool before removing. The cookies will seem underdone and soft when removed from oven, but they will harden after a few minutes.
