Warming Chocolate Flax Porridge

I’ve been doing a lot of experimenting with grain free oatmeal alternatives now that the weather is getting cold and it’s all I crave!! This version has to be the best yet. It tastes like an incredibly rich and indulgent warm chocolate pudding, but you don’t have to feel guilty! It is high in protein, healthy fats and fiber, all while being free of gluten, grains, dairy, nuts and refined sugar! Enjoy this delicious recipe!

Serves 1 – Recipe adapted from here

You will need:

2 tbsp ground flax seed
3 tbsp pumpkin puree
you could also use mashed banana
1/2 cup coconut or almond milk
3/4 cup egg whites (I used All Whites brand)
1 tbsp raw cacao powder
1/2 tsp vanilla extract
sweetener of choice, to taste


Directions:


Place all ingredients (besides vanilla extract and sweetener) in a saucepan and turn on the heat to medium.
Whisk continuously until the n’oatmeal thickens (trust me, it will!) – about 5-7 minutes
Add the vanilla extract and sweetener toward the end of cooking to keep the flavor.
Pour in a bowl, top with whatever you want and dig into your grain free chocolate oatmeal pudding!
