Thai Style Sausage with Cabbage Salad
Ingredients: (2-3 servings)
200 gm chicken cocktail sausages- sliced (or any kind of sausages)
2 cup roughly sliced cabbage
1/2 onion- sliced
1/2 tomato- sliced
1 tbsp lime juice
2 tsp sugar
1 tbsp fish sauce
1 or 2 chili- sliced
2 cup chicken stock or vegetable stock
Few spring onion- sliced
Method:
Bring stock to boil in the medium pot.
Once the stock is boiling, add sausages. Cook the sausages for few minutes or until they cooked thoroughly.
Remove the sausages out of the stock and transfer it to the mixing bowl.
Add cabbages in the same stock and cook for 1 or 2 minutes or until the cabbage slightly soft but still crunchy. Drain off all liquid and transfer it into the mixing bowl.
In another mixing bowl, mix sugar, fish sauce, lime juice and chili. Mix and allow sugar to dissolve and set the dressing aside.
Back to the salad bowl, add tomato and onion.
Add the dressing and gently toss everything together.
Add spring onion and serve.
The salad was well balance and fresh. I love the smell developed when lime and fish sauce mixed. It was spicy, light and perfect.
