Sweet Potato Hash Browns

Sweet potato is such a wonderfully versatile food, you can do so many things with it – sweet potato fries, hash browns, add them to soups, omelettes, or just eat them plain. They can be prepared sweet or savory, and they’re loaded with vitamin A, fiber and potassium. While sweet potatoes have more natural sugars than the regular white potato, they contain more overall nutrients and fewer calories per serving.

Serves 1

You will need:

1/2 large sweet potato
1 egg
spices, to taste
for sweet hash browns: use cinnamon and nutmeg
for savory hash browns: use salt and pepper

Directions:


Melt coconut oil in a pan over medium heat.
Grate your sweet potato in a food processor, or using a hand grater.
Squeeze out as much liquid as possible.
I placed the grated potato in a couple paper towels and squeezed it over the sink.
Place in a large bowl.
Whisk the egg then add it to the sweet potato,
Add spices and mix thoroughly with your hands.
Take a palmful of the mixture at a time and place it in the hot pan.
Cook until the bottom is browned and you can flip the hash brown, about 2-3 minutes.
Let cook on the other side until browned.
Repeat with the rest of the potato and serve warm!
