this is a great low carb & gluten free alternative to pizza that has been all over the internet lately. I finally tried it and it was fantastic! i used this recipe as a guide. a bit time consuming but definitely worth the effort in the end.
ingredients:
- 1 medium-sized head of cauliflower
- ¼ cup grated parmesan cheese
- ¼ cup shredded mozzarella cheese
- 1 large egg
- ½ tsp crushed garlic
- ½ tsp italian seasoning
- non-stick cooking spray
- ¼ tomato sauce
- 4 cups of baby spinach
- ¾ cup shredded mozzarella cheese
- ¼ cup crumbled feta
directions:
- chop up cauliflower into small pieces and place into a food processor. pulse until the cauliflower is the texture of course flour.
- place cauliflower in a microwave-safe bowl, cover, and cook on high for about 5 minutes.
- allow cauliflower to cool for a few minutes, then place on a clean dish towel and wring out all the liquid. this is essential for a crispy crust. place the cauliflower back in the bowl.
- add the ¼ cup of parmesan, ¼ cup of mozzarella, egg, and spices, and mix well into a dough.
- place a piece of parchment paper on a large cookie sheet, and cover with non-stick cooking spray.
- pat the dough mixture onto the parchment into a pizza shape. I went with a sort of oval.
- pre-bake the crust at 425 degrees for about 15 minutes or until golden brown.
- carefully remove the crust from the oven, and add toppings. for the spinach and feta pizza i used tomato sauce, wilted spinach, mozzarella and feta cheese. to wilt the spinach i just sauteed it in a little olive oil for a few minutes until soft.
- place the pizza back in the oven and cook for another 15 minutes, or until the cheese is bubbly.
- eat and enjoy!
