Spinach & Feta Cauliflower Crust Pizza

this is a great low carb & gluten free alternative to pizza that has been all over the internet lately. I finally tried it and it was fantastic! i used this recipe as a guide. a bit time consuming but definitely worth the effort in the end.

ingredients:

  • 1 medium-sized head of cauliflower
  • ¼ cup grated parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 1 large egg
  • ½ tsp crushed garlic
  • ½ tsp italian seasoning
  • non-stick cooking spray
  • ¼ tomato sauce
  • 4 cups of baby spinach
  • ¾ cup shredded mozzarella cheese
  • ¼ cup crumbled feta

directions:

  • chop up cauliflower into small pieces and place into a food processor. pulse until the cauliflower is the texture of course flour.
  • place cauliflower in a microwave-safe bowl, cover, and cook on high for about 5 minutes.
  • allow cauliflower to cool for a few minutes, then place on a clean dish towel and wring out all the liquid. this is essential for a crispy crust. place the cauliflower back in the bowl.
  • add the ¼ cup of parmesan, ¼ cup of mozzarella, egg, and spices, and mix well into a dough.
  • place a piece of parchment paper on a large cookie sheet, and cover with non-stick cooking spray.
  • pat the dough mixture onto the parchment into a pizza shape. I went with a sort of oval.
  • pre-bake the crust at 425 degrees for about 15 minutes or until golden brown.
  • carefully remove the crust from the oven, and add toppings. for the spinach and feta pizza i used tomato sauce, wilted spinach, mozzarella and feta cheese. to wilt the spinach i just sauteed it in a little olive oil for a few minutes until soft.
  • place the pizza back in the oven and cook for another 15 minutes, or until the cheese is bubbly.
  • eat and enjoy!
