For a long time now, people have thought I was weird when I told them about how much I love the strawberry-tomato combination. No one more so than John. But, he agreed to be my guinea pig for this drink. I’m glad that he liked it as much as he did, or I would never have lived it down. Roasting the strawberries brings out some surprising flavor and when it’s all blended together – watch out! The early morning cocktails will be a staple at your house!
Roasted Strawberry Bloody Mary
Serves: 4
1 cup strawberries
1 tablespoon balsamic vinegar
2 cups Scales Cocktails Bloody Mary Mix
1 cup vodka
Preheat the oven to 350 degrees F. Wash the strawberries and hull them (cut off their tops). Cut them in half and lay them in a single layer on a baking sheet. Drizzle the balsamic vinegar over the tops. Bake 20-30 minutes, until the juices are bubbling and the strawberries are soft to the touch. Let cool.
Blend the roasted strawberries andScales Cocktails Bloody Mary Mix in a blender and puree. Strain, if desired and pour in vodka. Garnish with a strawberry or olives.
