I love fall, I do. Everything about it- the changing colors, the smells, Halloween, the lead up to the holidays, pumpkin patching, pumpkin everything, apple picking, apple everything….



However, these crock pot skinny caramel apple pie oats coax me out of bed with their holiday smell and comforting warmth, easing my transition from warm covers to cold, fall mornings and generally just making for a much happier me.

This breakfast is creamy, crunchy and sweet all at the same time and fills the house with the intoxicating smell of cinnamon and apples, sort of like my skinny crock pot poached apples did. Bonus, it’s made in my best friend, the crock pot. I LOVE the crock pot. And there’s enough of this to feed two people all week. Double bonus, there’s no added sugar, it can be gluten free and vegan, and it’s totally skinny jeans friendly. Triple bonus: Let’s talk about the texture here. Oatmeal can be – for me – super unappealing because of it’s strangely flan-like texture (ew! read about my flan issues here) and lack of chew-ability . Unless, it’s ice cream, pudding, frozen yogurt, or creamy soup I don’t like no chew foods. Fortunately, here the copious amounts of apple give this breakfast a nice crunch and the oats just sort of melt and become a caramelized sauce. Quadruple bonus: the milk caramelizes so it is like you are eating caramel apple pie- FOR BREAKFAST!

If that doesn’t start your day with a smile, I don’t know what will.

Crock Pot Skinny Caramel Apple Pie Oats
Ingredients- makes ten heaping 1/2 cup servings
- 6 small apples (or 3-4 large apples), diced
- 1 1/2 cups of rolled oats (I used gluten free oats from Bob’s Red Mill)
- 2 cups of skim milk (for vegans use soy or nut milk)
- 3 tablespoons of honey (to go vegan use maple syrup)
- 1 cup of apple cider (I used sugar free cider)
- 2 tablespoons of cinnamon
- 1 teaspoon of nutmeg
- 1/2 teaspoon of ginger
- sprinkle of salt
How to Make:
- Spray your crock pot with nonstick spray. Don’t skip this step or you won’t be able to get your oats out! Add the oats to the bottom of the pan and pour in the milk and apple cider. Add the chopped apples, spices, and honey or maple syrup and give the pot a stir. Cook on high for 3-4 hours or on low for 6-7 hours. Just a reminder, all crock pots are different. Mine tends to cook things super fast so my cook time tends to be lower. Try this recipe once during the day when you will be home so that you don’t overcook the oats and evaporate all the liquid.
