As a child, Coleslaw was my least favourite of all the salads. It still brings back memories of birthday barbeque’s catered with large plastic tubs full of supermarket salads. Now, this Raw Rainbow Slaw is one of my go to salads for Winter. Not only does it provide a little colour on a grey day, the raw garlic is a serious cold buster.
There are so many great things about this salad. Eating meals with a wide variety of colours isn’t just about making your plate look good, it’s a sure fire way to make sure you’re getting a variety of different nutrients into your diet. Garlic is also a superstar vegetable, providing a decongestant effect and full of vitamin C.
Often if I’m feeling run down I’ll make this salad but add a couple more cloves of garlic (we suggest you don’t do this right before a work meeting), though you can make the salad with just one clove if you find garlic overpowering or would like to share with friends.
Raw Rainbow Slaw
Serves 6
Ingredients:
1/4 red cabbage
5 large kale leaves
2 Grated Carrots
2 tbsp tahini
2 cloves garlic
juice of 1/2 a lemon
1 tbsp honey or maple syrup
1/2 tsp ground turmeric
a handful of sesame seeds for topping
Method:
Finely slice the red cabbage and kale. Massage the kale then add all vegetables to a bowl and mix. Finely dice garlic and crush in a grinder, add all other ingredients and thin with water. Add dressing to salad and toss, garnish with sesame seeds.
