Happy 22nd Birthday to ME!!!! There was no better way to start my day than with my favorite Peanut Butter Cup Pancakes! These are gluten free, grain free, and dairy free, loaded with fiber and protein to keep me full and fueled!

Peanut Butter Cup Pancakes
Serves 1
Gluten Free, Grain Free, Dairy Free, Refined Sugar Free
You will need:
Chocolate Batter:
2 tbsp coconut flour
1/2 tbsp cacao powder OR MRM chocolate protein powder
1 tsp baking powder
Peanut Butter Batter:
1 tbsp coconut flour
1 tbsp Crazy Richard’s PurePB powder
1/2 tsp baking powder
Wet ingredients:
1 egg
1/2 cup carton egg whites
liquid stevia, to taste
Directions:
Preheat a pan over medium and melt coconut oil
In one bowl, whisk together dry ingredients for the chocolate batter
In a separate bowl, whisk together the dry ingredients for peanut butter batter
In a third bowl, whisk the wet ingredients
Pour about 2/3 of the egg mixture into the chocolate batter, and the remaining 1/3 into the peanut butter batter
Whisk both batters until smooth and slightly pourable (still on the thick side)
add more egg whites if needed to achieve proper consistency
Pour 1/8 cup chocolate batter onto pan
Pour 1 tbsp peanut butter batter directly into the center of the chocolate pancake
Cook until the top looks set, then carefully flip and cook until browned on both sides
Repeat with remaining batter and top with more chocolate and peanut butter!
