Monkey Muffins...

Today my fine readers I have a special guest posting. My one and only Dolly… She can usually be found blogging overhere but since her brother Champ has been born, her posts are few and far in between. Sporadic at best but she’s young yet… I am just delighted she wants a blog!

She’s quite the little baker and is very competent in the kitchen. Although competency on the clean up waivers, depending on her mood! But aren’t we all a little like that. Especially when it comes to the post bake clean up! Never the less, this girl has a sweet tooth in her DNA, it’s no surprise she’s a dab hand in the kitchen.

She wanted to make her brother some“good for him” muffins and between the two of us we came up with the recipe. Not the hardest or most nutritious by a long shot but, fun, easy and above all tasty… And that’s what counts,  right?

So without further adieu, allow me to introduce my Dolly, your guest poster on Cupcakery today!

Hello everyone, I’m Dolly and I am here today to share with you a recipe and my muffins that I baked for my baby brother. I call them “Monkey Muffins” because not only do they have bananas in them and monkeys love bananas but also because Champ is a total monkey and the name suits him really well.

So you know my Momma is always baking in the kitchen, but sometimes she moves over and lets others in to have a go and yesterday it was my turn! Here’s how I made them…

  • 125g of butter
  • 125g of demerara sugar
  • 225g of brown flour
  • 2 tsp of vanilla
  • 125ml of milk
  • 3 banana

 

  1. Mash 3 bananas in a bowl so that they are nice and small and super squished.
  2. Mixed the sugar and the butter in the mixer and then add the egg,
  3. When mixed to a batter add the brown flour and milk.
  4. Now it’s time to stir in the banana. When you have it fully mixed up, scoop the muffins into their cases and put them in the oven at 180. Bake for 25 minutes.

When you are finished, let them cool in their tins for about 10 minutes and take them out, allow them to cool on a wire rack and you  will have 12 beautiful Monkey Muffins.

I really enjoy baking cupcakes and cakes with my Momma and by myself. Mostly by myself but my Momma is always there to help me when I need her.

My Grandad, Oscar and Momma all really like my Monkey Muffins. I am not a fan of bananas but I did try a bit and they weren’t too bad! I think I’ll save them for my baby bro’ though… that monkey needs his banana muffins!
