Dairy-Free Shortbread Cookies

Happy December, everyone! These cookies are perfect for The Holidays! They’re so easy and quick to make, and so fun to decorate, and even better to eat. You can dip these in chocolate or put sprinkles on them, or even icing! They’re so versatile and so yummy!

Ingredients:

1 cup Earth Butter (or other dairy-free butter)
3/4 cups Powdered Sugar
2 cups All-Purpose Flour
1/2 tsp Vanilla Essence
Sprinkles/Melting Chocolate for decorating

Instructions:

Preheat oven to 350F.
Whisk butter until fluffy and then add all other ingredients and mix well.
If the dough is too sticky, add more flour, if its too stiff add more butter.
Line a baking pan with some wax paper.
Use roughly 2 tsp of dough per cookie and place 1cm apart on sheet (roll out and cut them into fun shapes or use a cookie press.)
(Optional) Decorate with sprinkles before putting them in the oven! (or dip in chocolate once cooked).
Bake for 10-15 minutes (or until edges and bottoms of cookies are golden brown). Be careful not to burn them. Let them cool before serving them and then enjoy!
(Optional) Once cool, dip half of each cookie in melted chocolate.
