I know that some cookie exchanges frown upon certain types of cookies. I get it, you spent 5 hours making your cookies delicious and pretty while some other chick knocked some tiny tasteless blobs out in a hour using a spritz cookie press.
I’m personally not a fan of everyday cookies in cookie exchanges. I don’t really like chocolate chip cookies on a regular day, let alone as a christmas cookie.
But I do not adhere to the “no bar cookie” rule. Why should I? I love bar cookies: brownies, lemon squares, toffee bars…they are some of the best cookies. My all time favorite is the Magic Cookie Bar. I’m not sure what makes them magic, but they are insanely delicious and easy to do, though the ingredients aren’t cheap since the toppings are all bigger budget baking ingredients! Grab a pan and bring plan to bring some magic to your cookie exchange and see who dares to complain about these bar cookies!
1 stick of margarine
1 sleeve of graham crackers
1 can of sweetened condensed milk
1 cup semi-sweet chocolate chips
1 cup shredded sweetened coconut
1 cup chopped pecans

1 stick of margarine
1 sleeve of graham crackers
1 can of sweetened condensed milk
1 cup semi-sweet chocolate chips
1 cup shredded sweetened coconut
1 cup chopped pecans
Melt margarine in a rectangular pyrex pan (lasagna pan). Crush graham crackers (I put them in a ziplock bag and use a rolling pin), add to the melted margarine, pressing into the pan to form an even bottom layer.
Sprinkly nuts, chocolate chips, and coconut evenly over the crust. Drizzle the sweetened condensed milk over everything.
Bake 375 for 20 minutes or until the top browns.
Allow to fully cool before cutting into bars.
